    He is mostly of German (including some Alsatian) descent. Please add English, Scottish, Welsh, and Swiss-German to his ancestry.

    I would only use “unknown” if we know the ancestry is unknown or unknowable. Just because we don’t know their ancestry doesn’t mean it’s not publicly known. If we know who the mother is and she isn’t adopted, I would just remove her part from the ethnicity. His family likely knows her ancestry and isn’t trying to hide it from us.
