My mum and dad were both born in Italy and I had been distanced from that because I was born in Scotland… My dad grew up in a tiny, tiny village that only had a few hours of sunlight everyday, so he came to Scotland to start a new life… As such, his Italian upbringing was not really enforced upon my sister and me. Mum and Dad were quite happy to be living in Scotland and be Scottish.

Nope. People from Friuli are ethnically Italians, by in addition to standard Italian they also speak a dialect that is related to Ladin and Romansch
There is no such thing as an “italian ethnicity”. The nation of Italy was a mixture of various city-states before the unification in the 1860s and thus there has never been a “genuine” italian ethnicity
