I think its important to mention the place where they came along with their Jewish culture. As some people would argue that Jewish is a religion rather than an ethnicity. I believe for clarity we should include both if possible. The more information about their ancestry the better

I think you should just put Jewish for the ethnicity because Russian and Polish is where her Jewish parents are from and which is not their real ethnic background. so can you just put Jewish? Thanks!
